Distillerie de Saint Palais

The Distillerie de Saint Palais was born from a partnership between Maison GIRAUD and SVE, a cognac distiller since 1830. With almost 200 years of expertise in fine spirits, the distillery perfects every detail in the journey from grain to glass.

The whisky makers source high quality malted French barley and closely monitor the malting process.

The distillery has its own milling and mashing facility. The wash is distilled in traditional 2,500 to 10,000 liter copper pot stills.

Each whisky is aged and blended on-site in optimal moderate oceanic climate.

Additionally, Master Blender Georges Clot seeks limited amounts of the best whiskies from other French distilleries to express his art of blending and achieve optimal flavor profile.

Ex-cognac casks

The majority of the casks used to mature Alfred GIRAUD French Malt Whisky previously aged extra old cognac. They bestow a balanced nose and add a touch of elegance and complexity on the palate.

With more than 60 years of experience, André GIRAUD assists in seeking, sampling and hand-picking individual casks that, in most instances, he has known for decades. This meticulous process leads to the very limited production of Alfred GIRAUD French Malt Whisky.

New casks

The House of GIRAUD uses a limited proportion of new French and American oak casks to mature Alfred GIRAUD French Malt Whisky.

Part of the French oak is sourced from André GIRAUD’s family forestry operation located in Limousin, where the wood is raised and prepared on-site for years. The climate (warm but with plenty of rainfall), the soil and rocky growing conditions give Limousin oak a coarse and slightly loose grain which is ideal to age Whisky. The remainder of the oak is sourced from the region’s leading cooperages.

The Master Blender, Georges Clot

Georges Clot worked in a laboratory before joining a maison de cognac in 1972, where he trained as a Cellar Master until succeeding André GIRAUD in that position in 1990. He retired in 2003.

Today, supported by Gaetan Mariolle, Georges oversees the aging and blending of Alfred GIRAUD French Malt Whisky. By experimenting with an innovative selection of the best French whiskies, high quality new and used casks and bespoke toast levels, Georges and Gaetan develop the rich, balanced and complex flavor profile of each whisky.
